Prepare simple, flavorful chicken skewers marinated in lemon and garlic, perfect for grilling while staying strictly ketogenic.

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup fresh lemon juice
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • Wooden or metal skewers

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes before use.
  2. In a medium bowl, whisk together the lemon juice, olive oil, minced garlic, oregano, salt, and pepper to create the marinade.
  3. Add the cubed chicken to the marinade, tossing to coat all pieces evenly.
  4. Cover the bowl and refrigerate for a minimum of 1 hour, or up to 4 hours, to allow the flavors to penetrate. Do not marinate longer than 4 hours, as the lemon juice can start to cook the chicken.
  5. Preheat your grill to medium-high heat (about 400°F or 200°C).
  6. Thread the marinated chicken pieces onto the prepared skewers, packing them snugly but not too tightly. Discard any remaining marinade.
  7. Place the skewers on the preheated grill grates.
  8. Grill for 10 to 14 minutes, turning every 3 to 4 minutes, until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  9. Remove the skewers from the grill. Garnish with fresh chopped parsley before serving.

Notes

  • To keep the chicken moist, avoid overcooking; use a meat thermometer to check for doneness.
  • Serve these skewers with a side of grilled zucchini or a simple keto coleslaw.
  • If baking, place skewers on a foil-lined baking sheet and bake at 400°F (200°C) for 18-20 minutes, flipping halfway through.
