  • 1/2 cup almond flour
  • 1/2 cup heavy cream
  • 1 large egg, lightly beaten
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce (check label for low sugar/keto compliance)
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup crushed pork rinds (optional, for extra texture)
  • **For the Glaze:**
  • 1/4 cup sugar free ketchup
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon erythritol or preferred keto sweetener
  • 1 teaspoon Dijon mustard

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a standard loaf pan or line a baking sheet with parchment paper if you prefer a free-form loaf.
  2. In a large bowl, combine the ground beef, almond flour, heavy cream, egg, chopped onion, minced garlic, Worcestershire sauce, thyme, salt, pepper, and crushed pork rinds if using.
  3. Mix the ingredients gently with your hands until just combined. Do not overmix, as this can make the meatloaf tough.
  4. Shape the mixture into a loaf and place it in your prepared pan or on the baking sheet.
  5. In a small bowl, whisk together all the glaze ingredients: sugar free ketchup, apple cider vinegar, sweetener, and Dijon mustard.
  6. Spread about two-thirds of the glaze evenly over the top of the meatloaf.
  7. Bake for 45 minutes.
  8. Remove the meatloaf from the oven and brush the remaining glaze over the top.
  9. Return to the oven and bake for another 10 to 15 minutes, or until the internal temperature reaches 160°F (71°C).
  10. Let the keto meatloaf rest in the pan for 10 minutes before slicing and serving.

Notes

  • For a richer flavor, substitute half the ground beef with ground pork or veal.
  • If you do not have almond flour, you can use finely ground pork rinds as the binder instead.
  • To make this recipe ahead of time, assemble the loaf, cover it, and refrigerate for up to 24 hours before baking. Add about 10 minutes to the initial baking time if cooking from cold.
