  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 packet (1 ounce) low-carb taco seasoning mix
  • 1 (14.5 ounce) can diced tomatoes, undrained (check for no added sugar)
  • 1 (10 ounce) can Rotel (diced tomatoes and green chilies), undrained
  • 4 cups beef broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • Optional toppings: shredded cheddar cheese, sour cream, avocado slices, chopped cilantro

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the ground beef and cook, breaking it apart, until fully browned. Drain any excess grease.
  3. Add the chopped onion to the pot and cook until softened, about 5 minutes.
  4. Stir in the taco seasoning mix, cumin, and chili powder. Cook for 1 minute until fragrant.
  5. Pour in the diced tomatoes, Rotel, and beef broth. Stir well to combine all ingredients.
  6. Bring the soup to a boil, then reduce the heat to low, cover, and simmer for 15 minutes to allow the flavors to blend.
  7. Taste the soup and add salt and pepper as needed.
  8. Serve hot with your choice of keto-friendly toppings like cheese, sour cream, and avocado.

Notes

  • For the lowest carb count, check your taco seasoning label to confirm it does not contain added starches or sugar. You can make your own seasoning blend if needed.
