Ingredients

Scale
  • 1 pound thinly sliced beef (ribeye or sirloin)
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 1 tablespoon minced garlic
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon black pepper
  • 12 small corn tortillas
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup thinly sliced red onion
  • Lime wedges, for serving

Instructions

  1. In a bowl, combine soy sauce, brown sugar, sesame oil, garlic, ginger, and black pepper. Add the beef and toss to coat. Let marinate for at least 15 minutes.
  2. Warm the tortillas according to package directions.
  3. Heat a skillet or grill pan over medium-high heat. Cook the marinated beef in batches until browned and cooked through, about 2-3 minutes per side.
  4. Fill each warm tortilla with the cooked bulgogi beef.
  5. Top with cilantro and red onion.
  6. Serve immediately with lime wedges.

Notes

  • For a spicier kick, add a pinch of red pepper flakes to the marinade.
  • You can substitute thinly sliced chicken or pork for the beef.
  • Other toppings like kimchi, sriracha mayo, or pickled jalapeños are also delicious.
