  • 2-3 tablespoons fresh lemon juice

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it well.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  3. In a separate medium bowl, whisk together the egg, milk, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are fine.
  5. Gently fold in the fresh blueberries and lemon zest.
  6. Divide the batter evenly among the 12 muffin cups.
  7. Bake for 20-25 minutes, or until a wooden skewer inserted into the center of a muffin comes out clean.
  8. While the muffins cool slightly, prepare the glaze. In a small bowl, whisk together the powdered sugar and lemon juice until smooth.
  9. Once the muffins are cooled, drizzle the lemon glaze over the tops.
