  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup (1 stick) unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk
  • Zest of 1 large lemon
  • 2 tablespoons fresh lemon juice
  • 1 cup fresh blueberries
  • For Glaze (Optional): 1 cup powdered sugar, 2 tablespoons fresh lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set this aside.
  3. In a large bowl, beat the granulated sugar and softened butter together until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract, lemon zest, and lemon juice.
  5. In three additions, alternate adding the dry ingredients and the milk to the wet ingredients, beginning and ending with the dry mixture. Mix only until just combined. Do not overmix.
  6. Gently fold in the fresh blueberries.
  7. Pour the batter into your prepared loaf pan.
  8. Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
  10. If making the glaze, whisk the powdered sugar and lemon juice together until smooth. Drizzle over the cooled cake.

Notes

  • Gently toss the blueberries with one teaspoon of your flour mixture before folding them in to prevent sinking.
  • For the best flavor, use fresh lemon juice and zest.
  • You can substitute frozen blueberries, but do not thaw them before using.
  • This cake keeps well covered at room temperature for up to three days.
