Ingredients
Scale
1 pound cod fillets (about 4 pieces)
2 tablespoons olive oil
1 lemon, juiced
1 tablespoon fresh dill, chopped
1 clove garlic, minced
1/4 teaspoon salt
1/8 teaspoon black pepper
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Pat the cod fillets dry with paper towels. Place them on the prepared baking sheet.
In a small bowl, whisk together the olive oil, lemon juice, chopped dill, minced garlic, salt, and pepper.
Pour the lemon dill mixture evenly over the cod fillets, ensuring they are well coated.
Bake for 12 to 15 minutes, or until the fish is opaque and flakes easily with a fork.
Serve immediately and enjoy your beautiful, flaky cod.
Notes
You can use frozen cod if you thaw it completely before seasoning.
Fresh dill provides the best flavor, but dried dill can work in a pinch (use about 1 teaspoon).
This dish pairs well with steamed asparagus or roasted potatoes.
