1 pound large shrimp, peeled and deveined
3 tablespoons olive oil
4 tablespoons unsalted butter
6 cloves garlic, minced
1/4 cup fresh lemon juice
1 teaspoon lemon zest
1/4 teaspoon red pepper flakes (optional)
1/4 cup fresh parsley, chopped
Salt and black pepper to taste
Instructions
Pat the shrimp dry with paper towels and season lightly with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat.
Add the shrimp to the skillet in a single layer. Cook for 1 to 2 minutes per side until pink and opaque. Do not overcrowd the pan; cook in batches if necessary. Remove the shrimp and set aside.
Reduce the heat to medium. Add the butter to the same skillet. Once melted, add the minced garlic and red pepper flakes. Cook for about 30 seconds until fragrant, being careful not to burn the garlic.
Pour in the lemon juice and add the lemon zest. Stir constantly for 1 minute, scraping up any browned bits from the bottom of the pan.
Return the cooked shrimp to the skillet. Toss gently to coat the shrimp thoroughly with the sauce.
Remove from heat. Stir in the fresh parsley. Taste and add more salt or pepper if needed.
Serve immediately.
Notes
Use fresh lemon juice for the best flavor; bottled juice changes the taste.
For serving, toss this shrimp with cooked linguine, serve over rice, or pair with steamed asparagus.
Do not overcook the shrimp; they cook very quickly.
