1 pound large shrimp, peeled and deveined
3 tablespoons olive oil
4 cloves garlic, minced
1/4 cup fresh lemon juice
1 teaspoon lemon zest
1/2 teaspoon salt
1/4 teaspoon black pepper
Optional: fresh parsley, chopped, for garnish
Instructions
Thread the shrimp onto skewers. If using wooden skewers, soak them in water for 30 minutes first.
In a medium bowl, whisk together the olive oil, minced garlic, lemon juice, lemon zest, salt, and pepper.
Add the shrimp skewers to the marinade. Turn to coat them completely. Let them marinate for 15 to 20 minutes. Do not marinate longer, as the lemon juice can start to cook the shrimp.
Preheat your grill to medium-high heat. Lightly oil the grates.
Place the skewers on the hot grill. Cook for 2 to 3 minutes per side, until the shrimp turns pink and opaque.
Remove from the grill. Garnish with fresh parsley, if desired. Serve immediately.
Notes
Pat the shrimp dry before marinating for a better sear on the grill.
You can thread vegetables like bell peppers or zucchini onto the skewers with the shrimp.
This recipe works well on an indoor grill pan too.
