A recipe for making crispy, savory roasted chickpeas seasoned with lemon zest, juice, and Parmesan cheese.

  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon lemon zest
  • 1 teaspoon fresh lemon juice

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Dry the rinsed chickpeas thoroughly using paper towels or a clean kitchen cloth. Remove any loose skins. This step is key for crispiness.
  3. Toss the dried chickpeas with olive oil, salt, pepper, and garlic powder on the prepared baking sheet. Spread them into a single layer.
  4. Roast for 20 minutes. Shake the pan gently.
  5. Return the chickpeas to the oven and roast for another 10 to 15 minutes, or until they are golden brown and crunchy.
  6. Remove the chickpeas from the oven. Immediately transfer them to a medium bowl.
  7. While still warm, toss the roasted chickpeas with the grated Parmesan cheese, lemon zest, and lemon juice until evenly coated.
  8. Spread the coated chickpeas back onto the baking sheet to cool slightly before serving.

Notes

  • For extra crispiness, you can bake the chickpeas for 10 minutes before adding any oil or seasoning, then toss with oil and seasonings for the remaining time.
  • If you prefer an air fryer method, cook at 380°F (195°C) for 12-15 minutes, shaking halfway through, then toss with seasonings.
  • Store cooled, leftover chickpeas in a container that is not airtight to help maintain crunch.
  • Use these chickpeas as a topping for salads, soups, or eat them plain as a snack.
