1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
8 ounces fettuccine pasta
2 tablespoons olive oil
4 cloves garlic, minced
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
1 tablespoon lemon juice
1 teaspoon lemon zest
1 teaspoon black pepper, freshly ground
1/2 teaspoon salt
Fresh parsley, chopped, for garnish
Instructions
Cook fettuccine according to package directions. Drain, reserving about 1/2 cup of pasta water.
While pasta cooks, season chicken pieces with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
Add minced garlic to the skillet and cook for about 30 seconds until fragrant.
Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese, lemon juice, lemon zest, and black pepper. Cook for 1-2 minutes until sauce thickens slightly.
Return chicken to the skillet. Add the cooked fettuccine and toss to combine. If the sauce is too thick, add a little reserved pasta water to reach desired consistency.
Serve immediately, garnished with fresh parsley.
Notes
For extra zest, add a pinch of red pepper flakes to the sauce.
Feel free to add your favorite vegetables like spinach or broccoli.
