1 teaspoon baking powder
1/4 teaspoon salt
1 cup granulated sugar
1/2 cup unsalted butter, softened
2 large eggs
1 teaspoon vanilla extract
1/2 cup grated zucchini (about 1 small zucchini)
1/4 cup fresh lemon juice
Zest of 1 lemon
For the Glaze:
1 cup powdered sugar
2 tablespoons fresh lemon juice
1 tablespoon milk (or water)
Instructions
Preheat your oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large bowl, cream together the granulated sugar and softened butter until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fold in the grated zucchini, lemon juice, and lemon zest.
Pour the batter into the prepared baking pan and spread evenly.
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Let the bars cool completely in the pan on a wire rack.
While the bars are cooling, prepare the glaze. In a small bowl, whisk together the powdered sugar, lemon juice, and milk (or water) until smooth and pourable.
Once the bars are cool, drizzle the glaze over the top.
Allow the glaze to set before cutting and serving.

Ensure your zucchini is well-drained to prevent excess moisture in the bars.
