  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 8 ounces whole wheat pasta
  • 1 tablespoon olive oil
  • 1 cup chopped broccoli florets
  • 2 cloves garlic, minced
  • 1 ½ cups low-fat milk
  • ½ cup plain non-fat Greek yogurt
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • Salt and freshly ground black pepper to taste
  • Optional: Red pepper flakes for a little heat

Instructions

  1. Preheat your oven to 375°F (190°C). Cook the whole wheat pasta according to package directions. Drain and set aside.
  2. While the pasta cooks, heat the olive oil in a large oven-safe skillet over medium-high heat. Add the chicken pieces and cook until browned on all sides. Remove chicken from skillet and set aside.
  3. Add the broccoli florets to the same skillet and cook for 3-4 minutes until slightly tender-crisp. Add the minced garlic and cook for another minute until fragrant.
  4. Reduce the heat to low. Whisk in the low-fat milk and Greek yogurt until smooth. Stir in the Parmesan cheese and Italian seasoning.
  5. Return the cooked chicken and drained pasta to the skillet. Stir everything together until well combined and coated in the sauce. Season with salt and pepper to taste.
  6. If your skillet is not oven-safe, transfer the mixture to a baking dish.
  7. Bake for 20-25 minutes, or until the sauce is bubbly and heated through. If desired, sprinkle with red pepper flakes before serving.

Notes

  • For a creamier sauce, you can add a tablespoon of cornstarch mixed with a little cold water to the sauce before it thickens.
  • Feel free to add other vegetables like mushrooms or spinach.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave.
