2 tablespoons butter
1 medium yellow onion, chopped
2 celery stalks, chopped
4 cups chicken broth
4 large Russet potatoes, peeled and diced
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup all-purpose flour
2 cups milk
1 cup heavy cream
1 cup shredded sharp cheddar cheese, divided
1 cup cooked bacon, crumbled, divided
1/2 cup sour cream, divided
2 tablespoons fresh chives, chopped, for garnish
Instructions
Melt butter in a large pot over medium heat. Add onion and celery; cook until soft, about 5 minutes.
Add chicken broth, diced potatoes, salt, and pepper. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
In a small bowl, whisk flour into the milk until smooth. Pour this mixture into the simmering soup. Stir constantly until the soup thickens, about 5 minutes.
Reduce heat to low. Stir in the heavy cream. Do not let the soup boil after adding cream.
Remove the pot from the heat. Stir in half of the cheddar cheese, half of the bacon, and half of the sour cream until melted and combined.
If you prefer a smoother soup, use an immersion blender to partially blend the soup to your desired consistency.
Serve immediately, topping each bowl with remaining cheddar cheese, bacon, sour cream, and fresh chives.
Notes
For a smoother texture, use Yukon Gold potatoes instead of Russet.
To prevent sour cream from curdling, mix it with a little hot soup broth in a separate bowl before stirring it into the main pot off the heat.
This soup freezes well. Thaw overnight in the refrigerator and reheat gently on the stovetop, adding extra milk or cream if needed for consistency.
