1 tablespoon olive oil
1 cup chopped yellow onion
2 cloves garlic, minced
6 cups chicken broth
4 cups peeled and cubed russet potatoes (about 2 large potatoes)
1 teaspoon salt
1/2 teaspoon black pepper
1 cup milk
1/2 cup shredded cheddar cheese
4 slices bacon, cooked and crumbled
2 tablespoons chopped fresh chives
1/4 cup sour cream
Instructions
Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more until fragrant.
Pour in chicken broth and add potatoes, salt, and pepper. Bring to a boil, then reduce heat and simmer, covered, until potatoes are tender, about 15-20 minutes.
Carefully transfer about half of the soup to a blender (or use an immersion blender) and blend until smooth. Return the blended soup to the pot.
Stir in milk and cheddar cheese until the cheese is melted and the soup is heated through. Do not boil.
Ladle the soup into bowls. Top with crumbled bacon, chopped chives, and a dollop of sour cream.
Notes
For a creamier soup, you can use half-and-half instead of milk.
If you don’t have russet potatoes, Yukon Gold potatoes also work well.
Feel free to add other favorite toppings like green onions or a pinch of paprika.
