  • 4 large Russet potatoes, peeled and diced
  • 1 pound bacon, cooked and crumbled
  • 1 cup chopped yellow onion
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups milk
  • 1 cup heavy cream
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • Salt and freshly ground black pepper to taste
  • Fresh chives, chopped, for garnish

Instructions

  1. In a large pot or Dutch oven, combine the diced potatoes, crumbled bacon, chopped onion, minced garlic, and chicken broth.
  2. Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.
  3. Using an immersion blender, blend the soup until mostly smooth, leaving some potato chunks for texture. Alternatively, carefully transfer about half the soup to a regular blender and blend until smooth, then return it to the pot.
  4. Stir in the milk and heavy cream. Heat the soup gently over medium-low heat until warmed through. Do not boil.
  5. Gradually stir in the shredded cheddar cheese until melted and smooth.
  6. Remove from heat and stir in the sour cream until well combined.
  7. Season with salt and freshly ground black pepper to taste.
  8. Ladle the soup into bowls and garnish with extra crumbled bacon, shredded cheddar cheese, and chopped fresh chives.

Notes

  • For a richer flavor, you can use half-and-half instead of milk.
  • If you don’t have an immersion blender, you can mash the potatoes with a potato masher before adding the liquids.
  • Adjust the amount of cheese to your preference.
  • Leftover soup can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave.
