4 large bell peppers (any color), halved lengthwise and seeds removed
1 lb ground beef or turkey
1 packet taco seasoning
1/2 cup water
1 cup shredded cheddar cheese
1/2 cup salsa
1/4 cup chopped fresh cilantro
Optional toppings: sour cream, avocado, black olives, diced tomatoes
Instructions
Preheat your oven to 375°F (190°C).
Place the halved bell peppers in a baking dish.
In a skillet, brown the ground meat over medium heat. Drain any excess grease.
Stir in the taco seasoning and water. Bring to a simmer and cook for 5 minutes, or until the sauce has thickened.
Spoon the meat mixture evenly into the bell pepper halves.
Top each pepper half with shredded cheddar cheese and salsa.
Cover the baking dish with foil and bake for 30 minutes.
Remove the foil and bake for another 10-15 minutes, or until the peppers are tender and the cheese is melted and bubbly.
Garnish with fresh cilantro and your favorite optional toppings before serving.
Notes
For a vegetarian option, use plant-based ground meat or a mixture of black beans and corn.
Adjust the amount of taco seasoning to your spice preference.
If you prefer softer peppers, you can blanch them in boiling water for 5 minutes before stuffing.
