Ingredients

Scale
  • 2 Boneless, skinless chicken breasts
  • 1 cup Diced fresh mango
  • 1/4 cup Diced red onion
  • 1 Jalapeño, seeded and minced
  • 2 tablespoons Fresh lime juice
  • 1 tablespoon Chopped fresh cilantro
  • 1 teaspoon Olive oil
  • Salt and pepper to taste

Instructions

  1. Season the chicken breasts generously with salt and pepper.
  2. Heat the olive oil in a skillet over medium heat.
  3. Cook the chicken for 6-8 minutes per side, until cooked through (internal temperature reaches 165°F or 74°C).
  4. While the chicken cooks, combine the diced mango, red onion, minced jalapeño, lime juice, and cilantro in a small bowl. This is your salsa.
  5. Once the chicken is done, remove it from the skillet and let it rest for 5 minutes.
  6. Slice the chicken or serve whole. Top each piece with a generous spoonful of the fresh mango salsa.

Notes

  • You can grill the chicken instead of pan-frying for an added smoky flavor.
  • Adjust the amount of jalapeño based on how much heat you enjoy.
  • Use ripe, firm mangoes for the best salsa texture.
