1.5 lbs Salmon Fillets
1 lb Broccoli Florets
1 lb Baby Potatoes, halved
1 Red Onion, cut into wedges
3 tbsp Olive Oil
Salt, to taste
Black Pepper, to taste
For the Glaze:
1/4 cup Maple Syrup
2 tbsp Soy Sauce
1 tbsp Dijon Mustard
1 tsp Garlic Powder
Instructions
Preheat your oven to 400°F (200°C).
In a large bowl, toss the broccoli florets, halved baby potatoes, and red onion wedges with olive oil, salt, and pepper.
Spread the vegetables in a single layer on a large baking sheet.
Roast the vegetables for 15 minutes.
While the vegetables are roasting, prepare the maple glaze by whisking together the maple syrup, soy sauce, Dijon mustard, and garlic powder in a small bowl.
Remove the baking sheet from the oven. Push the vegetables to one side and place the salmon fillets on the other side of the sheet.
Brush the maple glaze generously over the salmon fillets.
Return the baking sheet to the oven and roast for another 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender and slightly caramelized.
Serve immediately.
Notes
Feel free to substitute your favorite vegetables like asparagus, bell peppers, or Brussels sprouts.
For crispier potatoes, ensure they are dry before tossing with oil.
Adjust the glaze ingredients to your taste preference.
