4 cups rolled oats
1 cup pecan halves, roughly chopped
1/2 cup pure maple syrup
1/4 cup melted coconut oil
1 teaspoon ground cinnamon
1/2 teaspoon salt
Instructions
Preheat your oven to 300°F (150°C). Line a large baking sheet with parchment paper.
In a large bowl, combine the rolled oats and chopped pecans.
In a small bowl, whisk together the maple syrup, melted coconut oil, cinnamon, and salt.
Pour the wet mixture over the dry ingredients. Stir well until everything is evenly coated.
Spread the granola mixture in a single, even layer onto the prepared baking sheet.
Bake for 30 to 40 minutes, stirring gently halfway through. Watch closely to prevent burning.
Remove from the oven. Let the granola cool completely on the baking sheet; this helps it crisp up.
Once cool, break the granola into clusters. Store in an airtight container.
Notes
You control the crunch: Stirring less often during baking creates larger clusters. Stirring more often results in smaller, looser pieces.
Adjust sweetness by slightly reducing the maple syrup if you prefer less sweetness.
