This classic marinated cucumber salad is a simple, old-fashioned, vinegar-based dish. Sliced cucumbers are submerged in a tangy marinade, creating a refreshing side that improves with time. It is a perfect make-ahead option for potlucks.

  • 3 medium cucumbers, thinly sliced
  • 1/2 cup white vinegar
  • 1/4 cup water
  • 2 tablespoons granulated sugar
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup thinly sliced red onion (optional)
  • 2 tablespoons fresh dill, chopped (optional)

Instructions

  1. Wash and thinly slice the cucumbers. You can use a mandoline for uniform slices.
  2. In a medium bowl, whisk together the white vinegar, water, sugar, salt, and black pepper until the sugar and salt dissolve.
  3. Add the sliced cucumbers and red onion (if using) to the marinade. Toss gently to ensure all the slices are coated.
  4. If using, stir in the fresh dill.
  5. Cover the bowl and refrigerate for at least 30 minutes, or preferably for several hours, to allow the flavors to meld.
  6. Serve chilled.
