1 pound boneless, skinless chicken breasts
1 tablespoon olive oil
1/2 cup sun-dried tomatoes, packed in oil, drained and chopped
1/2 cup chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 teaspoon dried Italian seasoning
1/2 teaspoon garlic powder
Salt and black pepper to taste
12 ounces pasta (fettuccine or penne work well)
Fresh basil for garnish (optional)
Instructions
Slice chicken breasts horizontally into thinner cutlets. Season both sides with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-7 minutes per side, or until golden brown and cooked through. Remove chicken from skillet and set aside.
Add chopped sun-dried tomatoes to the same skillet. Cook for 2 minutes, stirring.
Pour in chicken broth and scrape up any browned bits from the bottom of the pan. Bring to a simmer.
Stir in heavy cream, Parmesan cheese, Italian seasoning, and garlic powder. Reduce heat to low and simmer for 5-7 minutes, stirring occasionally, until the sauce thickens slightly.
While the sauce simmers, cook pasta according to package directions until al dente. Drain, reserving 1/2 cup of pasta water.
Slice the cooked chicken into bite-sized pieces or shred it.
Add the cooked pasta to the sauce in the skillet. Toss to coat. If the sauce is too thick, add a splash of the reserved pasta water until desired consistency is reached.
Stir in the cooked chicken.
Serve immediately, garnished with fresh basil if desired.
Notes
For a spicier kick, add a pinch of red pepper flakes to the sauce.
You can use chicken thighs instead of breasts for a richer flavor.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop with a splash of broth or cream to loosen the sauce.
