1 1/2 pounds boneless, skinless chicken breasts
1 tablespoon olive oil
1/2 cup chopped sun-dried tomatoes (oil-packed, drained)
1/4 cup chopped fresh basil
1 cup heavy cream
1/2 cup chicken broth
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Season chicken breasts with salt and pepper.
Heat olive oil in a large skillet over medium-high heat.
Add chicken breasts to the skillet and cook for 5-7 minutes per side, or until golden brown and cooked through. Remove chicken from skillet and set aside.
Add minced garlic to the skillet and cook for 1 minute until fragrant.
Stir in sun-dried tomatoes, basil, oregano, chicken broth, and heavy cream. Bring to a simmer.
Reduce heat to low and stir in Parmesan cheese until melted and sauce thickens.
Return chicken to the skillet, coating it in the sauce.
Serve immediately with your favorite sides.
Notes
For a richer flavor, use chicken thighs instead of breasts.
Add a splash of white wine to the sauce for extra depth.
Serve with pasta, rice, or crusty bread to soak up the delicious sauce.
