Mashed Cauliflower with Roasted Garlic

A simple and flavorful low-carb side dish, this mashed cauliflower with roasted garlic is easy to make on the stovetop. It’s a healthy alternative to traditional mashed potatoes.

Ingredients

  • 1 large head of cauliflower, cut into florets
  • 1 whole head of garlic
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1/4 cup milk or cream (optional)
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut off the top 1/4 inch of the garlic head, exposing the cloves. Drizzle with 1 tablespoon of olive oil, wrap in foil, and roast for 40-50 minutes, until soft and fragrant.
  3. While the garlic roasts, steam or boil the cauliflower florets until very tender, about 15-20 minutes. Drain well.
  4. Squeeze the roasted garlic cloves out of their skins into a bowl.
  5. Add the drained cauliflower, roasted garlic, butter, and remaining 1 tablespoon of olive oil to the bowl.
  6. Mash the ingredients together using a potato masher or a fork until smooth or to your desired consistency.
  7. Stir in milk or cream if using, for a creamier texture.
  8. Season with salt and black pepper to taste.

Notes

  • For a dairy-free option, use olive oil or a dairy-free butter alternative instead of butter and a dairy-free milk alternative.
  • Add a pinch of nutmeg for an extra layer of flavor.
  • You can also roast the cauliflower florets with the garlic for a deeper flavor.
