Make these easy, golden brown savory crisps featuring classic Greek spinach and feta filling wrapped in flaky phyllo dough. They are perfect for parties or as a light Mediterranean snack.

  • 10 sheets phyllo dough, thawed
  • 4 tablespoons unsalted butter, melted
  • 1 tablespoon olive oil
  • 10 ounces fresh spinach, chopped
  • 1/2 cup yellow onion, finely chopped
  • 4 ounces feta cheese, crumbled
  • 1 large egg, lightly beaten
  • 1/4 teaspoon ground nutmeg
  • Pinch of black pepper

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a small skillet, heat the olive oil over medium heat. Add the onion and cook until soft, about 5 minutes.
  3. Add the chopped spinach to the skillet. Cook until the spinach has wilted completely and all the moisture has evaporated. Remove from heat and let cool slightly.
  4. In a medium bowl, combine the cooled spinach mixture, crumbled feta cheese, beaten egg, nutmeg, and pepper. Mix gently until just combined. This is your flavorful feta bites filling.
  5. Lay one sheet of phyllo dough flat on your work surface. Brush the entire surface lightly with melted butter. Place a second sheet directly on top of the first, and brush it with butter as well. Cut the stacked sheets lengthwise into three equal strips.
  6. Place about 1 tablespoon of the spinach and feta mixture near one end of a phyllo strip. Fold the corner over the filling to form a triangle shape, then continue folding the strip over itself like a flag until you reach the end of the strip, creating a sealed triangle.
  7. Place the finished Mediterranean spinach and feta cheese crisps on the prepared baking sheet. Repeat this process with the remaining phyllo and filling.
  8. Brush the tops of all the triangles lightly with any remaining melted butter.
  9. Bake for 15 to 18 minutes, or until the pastries are golden brown and crisp. Serve warm.

Notes

  • For extra crispness, ensure your spinach filling is completely dry before mixing with the feta. Excess moisture will make the phyllo soggy.
  • You can prepare these savory Greek pastry recipe triangles ahead of time and freeze them unbaked. Place them on a tray in the freezer, and once frozen, transfer them to a freezer bag. Bake directly from frozen, adding 5-7 minutes to the baking time.
  • If you prefer a different shape, you can roll the filling into small logs instead of folding triangles.
