A delightful Mediterranean squash casserole bursting with fresh flavors, perfect for a quick and healthy meal.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 medium zucchini, thinly sliced
  • 1 pint cherry tomatoes, halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • Salt and freshly ground black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes.
  3. Add garlic and cook for 1 minute more until fragrant.
  4. Add sliced zucchini and halved cherry tomatoes to the skillet. Cook, stirring occasionally, until the zucchini is tender-crisp, about 8-10 minutes.
  5. Stir in the crumbled feta cheese, chopped parsley, and chopped mint. Season with salt and pepper to taste.
  6. Transfer the mixture to a baking dish.
  7. Bake for 15-20 minutes, or until heated through and the feta is slightly melted.
  8. Serve warm and enjoy!

  • You can add other Mediterranean herbs like oregano or thyme.
