- 2 medium zucchini
- 1 tablespoon olive oil
- 1/2 cup finely chopped red onion
- 2 cloves garlic, minced
- 1/2 cup cooked quinoa
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped Kalamata olives
- 1/4 cup chopped sun-dried tomatoes
- 2 tablespoons chopped fresh parsley
- 1 tablespoon fresh lemon juice
- Salt and black pepper to taste
- Preheat your oven to 375°F (190°C).
- Cut the zucchini in half lengthwise. Scoop out the seeds and some of the flesh to create a boat, leaving about a 1/4-inch shell.
- Chop the scooped-out zucchini flesh and set aside.
- Heat olive oil in a skillet over medium heat. Add red onion and cook until softened, about 5 minutes.
- Add minced garlic and chopped zucchini flesh to the skillet. Cook for another 3-4 minutes until tender.
- In a bowl, combine the cooked quinoa, feta cheese, Kalamata olives, sun-dried tomatoes, chopped parsley, and lemon juice.
- Stir in the cooked onion, garlic, and zucchini mixture. Season with salt and pepper.
- Spoon the filling evenly into the zucchini boats.
- Place the stuffed zucchini boats on a baking sheet.
- Bake for 25-30 minutes, or until the zucchini is tender and the filling is heated through.
- Serve warm.

- For a vegan option, omit the feta cheese or use a vegan feta alternative.
- You can add other vegetables like bell peppers or spinach to the filling.
