  • 2 medium zucchini
  • 1 tablespoon olive oil
  • 1/2 cup finely chopped red onion
  • 2 cloves garlic, minced
  • 1/2 cup cooked quinoa
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped Kalamata olives
  • 1/4 cup chopped sun-dried tomatoes
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon fresh lemon juice
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the zucchini in half lengthwise. Scoop out the seeds and some of the flesh to create a boat, leaving about a 1/4-inch shell.
  3. Chop the scooped-out zucchini flesh and set aside.
  4. Heat olive oil in a skillet over medium heat. Add red onion and cook until softened, about 5 minutes.
  5. Add minced garlic and chopped zucchini flesh to the skillet. Cook for another 3-4 minutes until tender.
  6. In a bowl, combine the cooked quinoa, feta cheese, Kalamata olives, sun-dried tomatoes, chopped parsley, and lemon juice.
  7. Stir in the cooked onion, garlic, and zucchini mixture. Season with salt and pepper.
  8. Spoon the filling evenly into the zucchini boats.
  9. Place the stuffed zucchini boats on a baking sheet.
  10. Bake for 25-30 minutes, or until the zucchini is tender and the filling is heated through.
  11. Serve warm.

Notes

  • For a vegan option, omit the feta cheese or use a vegan feta alternative.
  • You can add other vegetables like bell peppers or spinach to the filling.
  • Top with a sprinkle of pine nuts for extra crunch.
