12 ounces pasta
1 can (5 ounces) tuna, drained
1 cup cherry tomatoes, halved
1/2 cup Kalamata olives, pitted and halved
1/4 cup red onion, finely chopped
4 ounces feta cheese, crumbled
1/4 cup fresh parsley, chopped
3 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon dried oregano
Salt and pepper to taste
Instructions
Cook pasta according to package directions. Drain and rinse with cold water.
In a large bowl, combine the cooked pasta, drained tuna, halved cherry tomatoes, Kalamata olives, chopped red onion, and crumbled feta cheese.
In a small bowl, whisk together the olive oil, lemon juice, and dried oregano. Season with salt and pepper.
Pour the dressing over the pasta mixture and toss gently to combine.
Stir in the chopped fresh parsley.
Serve immediately or chill for later.
Notes
For a heartier salad, add cucumber or bell peppers.
Adjust lemon juice and seasonings to your preference.
