1 cup (2 sticks) unsalted butter, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
2 cups all-purpose flour
Instructions
Preheat your oven to 325°F (160°C). Line baking sheets with parchment paper.
In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.
Beat in the vanilla extract and salt.
Gradually add the flour, mixing until just combined. Do not overmix.
Roll the dough into small balls, about 1 inch in diameter. Place them on the prepared baking sheets, leaving about 1 inch between cookies.
Gently flatten each ball with the bottom of a glass or your fingertips.
Bake for 18-20 minutes, or until the edges are lightly golden.
Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Notes
For an extra festive touch, you can sprinkle the tops with coarse sugar before baking.
Store in an airtight container at room temperature for up to a week.
