Ingredients

  • 4 cups corn kernels (fresh or frozen)
  • 2 tablespoons unsalted butter
  • 1/4 cup mayonnaise
  • 2 tablespoons sour cream
  • 1/4 cup grated cotija cheese
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon lime juice
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • Optional toppings: crumbled bacon, diced jalapeños, extra cotija cheese

Instructions

  1. If using fresh corn, cut kernels off the cobs.
  2. Melt butter in a large skillet over medium heat.
  3. Add corn kernels and cook, stirring occasionally, until tender and slightly charred, about 5-7 minutes.
  4. In a small bowl, whisk together mayonnaise, sour cream, cotija cheese, cilantro, lime juice, and chili powder.
  5. Add the creamy sauce to the skillet with the corn. Stir to combine and cook for another 1-2 minutes until heated through.
  6. Season with salt and pepper to taste.

Notes
