4 ears of corn, husked
1/2 cup mayonnaise
1/4 cup sour cream
1/4 cup finely chopped cilantro
1 clove garlic, minced
1/2 teaspoon chili powder, plus more for dusting
1/4 teaspoon ground cumin
Salt to taste
1/2 cup crumbled cotija cheese
Lime wedges for serving
Instructions
Grill or boil the corn until tender.
In a small bowl, mix together mayonnaise, sour cream, cilantro, minced garlic, chili powder, and cumin.
Season the mixture with salt to taste.
Spread the mayonnaise mixture evenly over the corn.
Sprinkle generously with cotija cheese.
