Make a rich, single-serving chocolate cake in minutes using your microwave. This recipe produces a very moist result.

Ingredients

  • 4 Tablespoons all-purpose flour
  • 4 Tablespoons granulated sugar
  • 2 Tablespoons unsweetened cocoa powder
  • 1/4 teaspoon baking powder
  • Pinch of salt
  • 3 Tablespoons milk
  • 1 Tablespoon vegetable oil
  • 1/4 teaspoon vanilla extract
  • 1 Tablespoon chocolate chips (optional)

Instructions

  1. In a standard microwave-safe mug (about 10-12 oz), whisk together the flour, sugar, cocoa powder, baking powder, and salt until combined.
  2. Add the milk, vegetable oil, and vanilla extract to the dry ingredients.
  3. Mix well with a fork until the batter is smooth and no dry pockets remain. Do not overmix.
  4. Stir in the chocolate chips, if using.
  5. Place the mug in the microwave. Cook on high power for 60 to 90 seconds. Cooking time varies based on microwave wattage. Start checking at 60 seconds.
  6. The cake is done when the top looks set but still slightly soft. If it looks wet, microwave in 10-second intervals.
  7. Let the cake cool in the mug for one minute before eating directly from the mug.

Notes

  • For an extra rich flavor, use a splash of strong brewed coffee instead of some of the milk.
  • Top with a scoop of vanilla ice cream or a dusting of powdered sugar before serving.
  • If you prefer a lava cake center, push a small square of dark chocolate into the middle of the batter before microwaving.
