  • 1 teaspoon vanilla extract
  • 1/2 cup milk

  • 1/2 cup packed light brown sugar (for swirl)
  • 1 teaspoon ground cinnamon (for swirl)
  • 1/4 cup chopped pecans or walnuts (optional)
  • For the Glaze: 1 cup powdered sugar, 2 tablespoons milk, 1/4 teaspoon vanilla extract, pinch of cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, salt, and 1 teaspoon cinnamon. Set aside.
  3. In a large bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients alternately with the milk, mixing just until combined. Do not overmix.
  6. Gently fold in the chopped apples and nuts, if using.
  7. In a small bowl, mix the brown sugar and swirl cinnamon until combined.
  8. Pour half of the batter into the prepared loaf pan. Sprinkle the cinnamon-sugar mixture evenly over the batter. Top with the remaining batter. You can gently swirl with a knife if desired.
  9. Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
  10. Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
  11. While cooling, prepare the glaze: Whisk together the powdered sugar, 2 tablespoons milk, vanilla, and a pinch of cinnamon until smooth. Add more milk, a drop at a time, if the glaze is too thick.
  12. Drizzle the glaze over the cooled apple bread before slicing and serving.
