Ingredients

Scale
  • 3 ripe bananas, mashed
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a standard loaf pan.
  2. In a large bowl, mix the mashed bananas and melted butter together.
  3. Stir in the sugar, egg, and vanilla extract until just combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just incorporated. Do not overmix.
  6. Fold in the chopped walnuts.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.

Notes

  • Use bananas that are very ripe; the browner they are, the sweeter your bread will be.
  • For an extra crunchy top, sprinkle a few extra walnuts over the batter before baking.
  • You can substitute pecans for walnuts if you prefer.
