These moist banana chocolate chip muffins are a perfect way to use up overripe bananas. They are easy to make and everyone will love them.

  • ½ cup granulated sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 3 ripe bananas, mashed
  • ⅓ cup melted unsalted butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup chocolate chips

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it well.
  2. In a large bowl, whisk together the flour, sugar, baking soda, and salt.
  3. In a separate medium bowl, mash the ripe bananas. Stir in the melted butter, egg, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients. Mix gently with a spatula until just combined. Do not overmix; a few lumps are fine.
  5. Fold in the chocolate chips.
  6. Divide the batter evenly among the 12 muffin cups.
  7. Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a muffin comes out clean.
  8. Let the muffins cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
