  • 1/2 cup (1 stick) unsalted butter, plus more for greasing
  • 6 ounces bittersweet or semisweet chocolate, chopped
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup granulated sugar
  • Pinch of salt
  • 2 tablespoons all-purpose flour
  • Powdered sugar, for dusting (optional)
  • Raspberries or vanilla ice cream, for serving (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Butter and lightly flour four 6-ounce ramekins.
  2. In a heatproof bowl set over a saucepan of simmering water, melt the butter and chopped chocolate together. Stir until smooth. Remove from heat.
  3. In a separate bowl, whisk together the eggs, egg yolks, granulated sugar, and salt until well combined.
  4. Gradually whisk the warm chocolate mixture into the egg mixture until smooth.
  5. Gently fold in the flour until just combined. Do not overmix.
  6. Divide the batter evenly among the prepared ramekins.
  7. Place the ramekins on a baking sheet. Bake for 10-12 minutes, or until the edges are set but the center is still soft.
  8. Let the cakes cool in the ramekins for 1 minute. Carefully invert each ramekin onto a serving plate.
  9. Serve immediately, dusted with powdered sugar and with raspberries or ice cream if desired.

  • You can prepare the batter a few hours ahead of time and refrigerate it. Let it sit at room temperature for about 30 minutes before baking.
