  • 4 ounces bittersweet chocolate, chopped
  • 4 ounces unsalted butter
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons all-purpose flour
  • 1 tablespoon unsweetened cocoa powder
  • 1/2 teaspoon red food coloring (or gel paste for deep color)
  • Pinch of salt

Instructions

  1. Preheat your oven to 425°F (220°C). Butter and lightly flour two 6-ounce ramekins.
  2. Melt the chopped chocolate and butter together in a heatproof bowl set over a saucepan of simmering water, stirring until smooth. Remove from heat and let cool slightly.
  3. In a separate bowl, whisk together the eggs, egg yolks, and sugar until pale and slightly thickened. Whisk in the vanilla extract and red food coloring.
  4. Gently fold the melted chocolate mixture into the egg mixture until just combined.
  5. In a small bowl, whisk together the flour, cocoa powder, and salt. Gently fold the dry ingredients into the chocolate mixture until no streaks remain. Do not overmix.
  6. Divide the batter evenly between the prepared ramekins.
  7. Place the ramekins on a baking sheet. Bake for 12 to 14 minutes. The edges should look set, but the center should still be soft.
  8. Let the cakes cool in the ramekins for about 1 minute. Run a small offset spatula or knife around the edge of each cake.
  9. Carefully invert each cake onto a serving plate. Serve immediately while the center is molten.

  • For the best molten center, do not overbake. Check them at 12 minutes.
  • Use high-quality chocolate for a superior flavor.
