4 firm pears (like Bosc or Anjou)
1 bottle (750ml) red wine (such as Merlot or Zinfandel)
1 cup water
1/2 cup granulated sugar
1 cinnamon stick
3 star anise
4 whole cloves
1 strip orange peel
1/4 teaspoon ground ginger
Instructions
Peel the pears, leaving the stems attached. You can core them from the bottom if you prefer.
In a large saucepan or pot, combine the red wine, water, sugar, cinnamon stick, star anise, cloves, orange peel, and ground ginger.
Bring the mixture to a simmer over medium heat, stirring to dissolve the sugar.
Carefully place the peeled pears into the simmering liquid. They should be mostly submerged. If not, add a little more wine or water.
Reduce the heat to low, cover the pot, and let the pears poach gently for 20-30 minutes, or until they are tender when pierced with a knife. The cooking time will vary depending on the ripeness and type of pear.
Once tender, carefully remove the pears from the liquid with a slotted spoon.
If you wish to thicken the poaching liquid into a syrup, increase the heat to medium-high and let it simmer uncovered for about 10-15 minutes, or until it has reduced and thickened to your liking.
Serve the poached pears warm, drizzled with the reduced mulled wine syrup. You can serve them with a dollop of whipped cream or a scoop of vanilla ice cream.
Notes
For a deeper flavor, you can add a splash of brandy or port to the poaching liquid.
Ensure the pears are firm but ripe for best results. Overripe pears can become too soft.
