1 pound cremini mushrooms, sliced
1 medium onion, chopped
2 cloves garlic, minced
1/2 teaspoon dried thyme
1/4 cup dry sherry or vegetable broth
1 cup vegetable broth
1 tablespoon Dijon mustard
1 teaspoon Worcestershire sauce (ensure vegetarian/vegan if needed)
1/2 cup sour cream or plain Greek yogurt (for non-vegan) or cashew cream (for vegan)
1 tablespoon fresh parsley, chopped
Salt and black pepper to taste
12 ounces egg noodles or your preferred pasta
Instructions
Cook the pasta according to package directions. Drain and set aside.
Heat olive oil in a large skillet over medium-high heat. Add mushrooms and cook until they release their liquid and start to brown, about 5-7 minutes.
Add the chopped onion to the skillet and cook until softened, about 3 minutes.
Stir in the minced garlic and dried thyme. Cook for 1 minute until fragrant.
Pour in the sherry or vegetable broth to deglaze the pan, scraping up any browned bits from the bottom. Let it reduce slightly, about 2 minutes.
Stir in the vegetable broth, Dijon mustard, and Worcestershire sauce. Bring the mixture to a simmer.
Reduce the heat to low. Stir in the sour cream or yogurt alternative until the sauce is smooth and creamy. Do not let it boil after adding the cream.
Taste the sauce and adjust seasoning with salt and pepper.
Toss the cooked pasta with the mushroom sauce.
Serve immediately, garnished with fresh parsley.
