1 1/2 cups graham cracker crumbs
1/4 cup melted butter
1 cup creamy peanut butter
1/2 cup unsalted butter, softened
1 cup powdered sugar
1 teaspoon vanilla extract
1 1/2 cups heavy cream, divided
1/2 cup semi-sweet chocolate chips
1 tablespoon vegetable oil
Instructions
Mix graham cracker crumbs and melted butter. Press into the bottom of a 9-inch pie plate.
In a bowl, beat peanut butter and softened butter until smooth.
Gradually add powdered sugar and vanilla extract, mixing until well combined.
Whip 1 cup of heavy cream until stiff peaks form. Gently fold it into the peanut butter mixture.
Spread the peanut butter filling evenly over the graham cracker crust.
Chill the pie for at least 1 hour.
Meanwhile, melt chocolate chips with vegetable oil and the remaining 1/2 cup of heavy cream in a double boiler or microwave. Stir until smooth.
Pour the chocolate ganache over the chilled pie.
Chill for another 30 minutes or until the ganache is set.
Notes
For a richer flavor, you can use dark chocolate chips.
If you don’t have graham crackers, any cookie crumbs will work.
Ensure your peanut butter is at room temperature for easier mixing.
