1 1/2 cups shredded unsweetened coconut
1 cup graham cracker crumbs
1/2 cup unsalted butter, melted
1 (14 ounce) can sweetened condensed milk
1/2 cup fresh lime juice
1 tablespoon lime zest
1/4 teaspoon salt
1/2 cup white chocolate chips (optional, for topping)
Instructions
Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
In a medium bowl, combine the shredded coconut and graham cracker crumbs.
Pour the melted butter over the coconut mixture and stir until everything is evenly moistened.
Press this mixture firmly and evenly into the bottom of the prepared pan. Place the pan in the freezer while you prepare the filling.
In a separate bowl, whisk together the sweetened condensed milk, lime juice, lime zest, and salt until smooth. The mixture will thicken slightly.
Pour the lime filling evenly over the chilled crust.
Return the pan to the freezer and chill for at least 4 hours, or until completely firm.
If using, melt the white chocolate chips and drizzle or spread over the top of the chilled bars. Return to the freezer for 15 minutes to set the chocolate.
Lift the bars out of the pan using the parchment overhang. Cut into 16 squares before serving.
Notes
For a gluten-free version, substitute the graham cracker crumbs with gluten-free graham crackers or use almond flour for the crust base.
If you prefer a tangier flavor, use Key lime juice instead of regular lime juice.
Store leftovers in an airtight container in the refrigerator for up to 5 days or in the freezer for up to 1 month.
