Make this simple, refreshing strawberry cheesecake bark without using your oven. It sets quickly in the freezer and breaks into easy-to-serve pieces.

  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy whipping cream
  • 1/2 cup strawberry puree (from fresh or thawed frozen strawberries)
  • 1 cup graham cracker crumbs
  • 1/4 cup butter, melted
  • 12 ounces white chocolate chips
  • 1/4 cup freeze-dried strawberry slices, crushed (for topping)

Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  3. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until just combined.
  4. Fold in the strawberry puree until the mixture is uniformly pink. Do not overmix.
  5. In a small bowl, mix the graham cracker crumbs and melted butter until the crumbs are evenly moistened. Press this mixture firmly into the bottom of the prepared pan to form the crust layer.
  6. Spread the strawberry cheesecake mixture evenly over the graham cracker layer. Place the pan in the freezer for 30 minutes to firm up slightly.
  7. While the cheesecake layer sets, melt the white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  8. Drizzle or spread the melted white chocolate over the chilled cheesecake layer.
  9. Immediately sprinkle the crushed freeze-dried strawberries over the chocolate layer.
  10. Return the pan to the freezer and freeze for at least 3 hours, or until completely firm.
  11. Use the parchment paper overhang to lift the bark from the pan. Place on a cutting board and break into irregular pieces.

Notes

  • For the best strawberry flavor, use ripe fresh strawberries for the puree.
  • If you do not have freeze-dried strawberries, you can use finely chopped fresh strawberries, but they must be very dry before sprinkling on top.
  • Store leftovers in an airtight container in the freezer.
