Make these simple, rich bars using dates, coconut, and chocolate without turning on your oven.

  • 1 cup pitted Medjool dates
  • 1 cup unsweetened shredded coconut, divided
  • 1/2 cup raw almonds or walnuts
  • 1/4 cup cocoa powder
  • 1/4 teaspoon sea salt
  • 1/2 cup dark chocolate chips
  • 1 teaspoon coconut oil

Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. Place the dates, 3/4 cup of the shredded coconut, almonds, cocoa powder, and salt into a food processor.
  3. Process the mixture until it forms a sticky, uniform dough. Stop and scrape down the sides as needed.
  4. Press the dough evenly into the prepared pan. Use the back of a spoon or your fingers to compact it firmly.
  5. Place the pan in the freezer while you prepare the topping.
  6. In a small, microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until smooth.
  7. Pour the melted chocolate mixture over the date base and spread it evenly.
  8. Sprinkle the remaining 1/4 cup of shredded coconut over the chocolate layer.
  9. Return the pan to the freezer for at least 1 hour, or until the chocolate is firm.
  10. Lift the bars out of the pan using the parchment paper overhang. Cut into 12 to 16 squares or bars.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to one week, or in the freezer for longer storage.
  • If your dates are not soft, soak them in hot water for 10 minutes, then drain them well before using.
  • You can substitute pecans for almonds if you prefer.
