  • 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1 head broccoli, cut into florets
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Heat olive oil in a large oven-safe skillet over medium-high heat.
  3. Add chicken pieces and season with salt, pepper, garlic powder, and onion powder. Cook until browned on all sides, about 5-7 minutes.
  4. Stir in the uncooked rice and chicken broth. Bring to a simmer.
  5. Add the broccoli florets to the skillet, nestling them into the rice and chicken mixture.
  6. Cover the skillet tightly with a lid or aluminum foil.
  7. Bake for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
  8. Remove the cover and sprinkle the shredded cheddar cheese evenly over the top.
  9. Return to the oven for another 3-5 minutes, or until the cheese is melted and bubbly.
  10. Let it rest for a few minutes before serving.
