Cook a flavorful Cajun-seasoned catfish and sweet corn together in one pan for a simple, quick dinner with minimal cleanup.

  • 4 (6 oz) catfish fillets
  • 1 tablespoon Cajun seasoning blend
  • 1 tablespoon olive oil
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 cup frozen or fresh corn kernels
  • 1/4 cup chopped green onions
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a large, rimmed baking sheet or oven-safe skillet.
  2. Pat the catfish fillets dry. Rub both sides of the fillets with the Cajun seasoning blend, salt, and pepper. Place the seasoned fillets on one side of the prepared pan.
  3. In a small bowl, whisk together the heavy cream, chicken broth, Parmesan cheese, garlic powder, and smoked paprika until smooth.
  4. Pour the cream mixture over the empty side of the pan. Scatter the corn kernels evenly into the cream sauce.
  5. Place the pan in the preheated oven and bake for 15 minutes.
  6. Carefully remove the pan from the oven. The sauce should be slightly thickened. Gently spoon some of the sauce and corn over the catfish fillets.
  7. Return the pan to the oven and bake for another 5 to 8 minutes, or until the catfish is cooked through and flakes easily with a fork.
  8. Remove from the oven, sprinkle with fresh green onions, and serve directly from the pan.

Notes

  • If you prefer a thicker sauce, you can mix 1 teaspoon of cornstarch with 1 tablespoon of cold water and stir it into the cream mixture before pouring it onto the pan.
  • Adjust the amount of Cajun seasoning based on your preference for heat.
  • You can substitute the corn with other quick-cooking vegetables like halved cherry tomatoes or asparagus spears.
