- 1 tablespoon olive oil
- 1 pound large shrimp, peeled and deveined
- 4 cloves garlic, minced
- 1 small yellow onion, diced
- 1 cup long-grain white rice, uncooked
- 2 cups chicken or vegetable broth
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
- 1 lemon, cut into wedges
- Heat the olive oil in a large, oven-safe skillet over medium heat.
- Add the diced onion to the skillet and cook until softened, about 3 minutes.
- Add the minced garlic and cook for 1 minute until fragrant. Do not let the garlic burn.
- Stir in the uncooked rice, salt, and pepper. Cook for 1 minute, stirring constantly.
- Pour in the broth. Bring the mixture to a simmer, then cover the skillet tightly with a lid or foil.
- Reduce the heat to low and cook for 15 minutes, or until the liquid is absorbed and the rice is tender. Do not lift the lid during this time.
- Remove the skillet from the heat. Gently stir in the shrimp, distributing them evenly over the rice.
- Cover the skillet again and let it stand for 5 to 7 minutes, or until the shrimp are pink and cooked through.
- Stir in the fresh parsley. Serve immediately with lemon wedges.
Notes
- Use low-sodium broth to control the final salt level.
- If your skillet is not oven-safe, you can cover it tightly with a lid instead of foil for the rice cooking step.
- For extra flavor, add 1 tablespoon of butter when stirring in the shrimp.
