- 1.5 lbs boneless, skinless chicken thighs, cut into 1.5-inch pieces
- 1 lb baby potatoes, halved or quartered if large
- 1 large red onion, cut into wedges
- 2 medium zucchinis, cut into 1-inch pieces
- 1 lemon, half juiced, half sliced
- 3 tablespoons olive oil
- 1 tablespoon dried rosemary
- 1 tablespoon dried thyme
- 1 teaspoon garlic powder
- Salt and freshly ground black pepper to taste
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the chicken pieces, potatoes, red onion, and zucchini.
- In a small bowl, whisk together the olive oil, lemon juice, rosemary, thyme, garlic powder, salt, and pepper.
- Pour the olive oil mixture over the chicken and vegetables. Toss to coat everything evenly.
