1 pound pasta (like rotini or penne)
1 pound ground beef
6 slices bacon, chopped
1 onion, chopped
2 cloves garlic, minced
4 cups beef broth
1 (15 ounce) can diced tomatoes, undrained
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon paprika
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1 cup shredded cheddar cheese
1/2 cup shredded Monterey Jack cheese
Optional toppings: chopped fresh parsley, extra bacon bits, pickles
Instructions
In a large pot or Dutch oven, cook the chopped bacon over medium heat until crispy. Remove bacon with a slotted spoon and set aside, leaving the bacon grease in the pot.
Add the ground beef to the pot with the bacon grease. Cook, breaking it up with a spoon, until browned. Drain off any excess grease.
Add the chopped onion to the pot and cook until softened, about 5 minutes. Stir in the minced garlic and cook for 1 minute more until fragrant.
Pour in the beef broth and diced tomatoes. Stir in the salt, black pepper, paprika, onion powder, and garlic powder. Bring the mixture to a boil.
Add the dry pasta to the pot, ensuring it is submerged in the liquid. Reduce heat to medium-low, cover, and simmer for 10-15 minutes, or until the pasta is al dente and most of the liquid has been absorbed. Stir occasionally to prevent sticking.
Remove the pot from the heat. Stir in the shredded cheddar and Monterey Jack cheeses until melted and creamy.
Stir in most of the cooked bacon.
Serve hot, garnished with optional toppings like fresh parsley, extra bacon bits, or pickles.
Notes
For a spicier kick, add a pinch of red pepper flakes with the other seasonings.
If you don’t have beef broth, chicken broth can be substituted.
