Enjoy a hearty and comforting bowl of One-Pot Chicken and Dumplings. This recipe brings together tender chicken, mixed vegetables, and fluffy biscuit dumplings, all cooked together in a single pot for easy cleanup and maximum flavor.

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 cup chopped yellow onion
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and freshly ground black pepper to taste
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken pieces and cook until browned on all sides. Remove chicken from the pot and set aside.
  2. Add chopped onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
  3. Stir in minced garlic and cook for 1 minute more until fragrant.
  4. Pour in chicken broth and add thyme, rosemary, salt, and pepper. Bring to a simmer.
  5. Return the browned chicken to the pot. Reduce heat to low, cover, and simmer for 15 minutes.
  6. While the chicken simmers, prepare the dumplings. In a medium bowl, whisk together flour, baking powder, and salt.
  7. In a separate small bowl, whisk together milk and melted butter.
  8. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  9. Drop spoonfuls of the dumpling batter onto the simmering chicken and vegetable mixture.
  10. Cover the pot and cook for 15-20 minutes, or until the dumplings are cooked through and fluffy.

Notes

  • Ensure the heat remains low when simmering to prevent the bottom from scorching.
  • Do not lift the lid while the dumplings are cooking to allow them to steam properly.
  • Add frozen peas or corn in the last 5 minutes of cooking for extra vegetables.
