One-Pot Creamy Garlic Parmesan Pasta

Make a rich, creamy garlic parmesan pasta in a single pot. This recipe is fast, easy, and perfect for a weeknight dinner.

  • 12 ounces spaghetti or linguine
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 4 tablespoons unsalted butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Place the pasta, broth, minced garlic, salt, and pepper into a large pot or Dutch oven.
  2. Bring the mixture to a boil over medium-high heat.
  3. Once boiling, reduce the heat to medium-low and cook, stirring frequently, for about 10 to 12 minutes, or until the pasta is al dente and most of the liquid has been absorbed.
  4. Remove the pot from the heat. Stir in the heavy cream, butter, and red pepper flakes, if using.
  5. Add the 1/2 cup of grated Parmesan cheese and stir continuously until the cheese melts and the sauce becomes smooth and creamy.
  6. Serve immediately with extra grated Parmesan cheese on top.

Notes

  • If the sauce seems too thick after adding the cheese, add a splash of hot water or extra broth until you reach your desired consistency.
  • Use freshly grated Parmesan cheese for the best melting quality and flavor. Pre-shredded cheese often contains anti-caking agents that prevent smooth melting.
  • For a brighter flavor, add 1 teaspoon of fresh lemon zest along with the cheese.
